- For liquids, 1 mL ≈ 1 g only for water; oils and syrups weigh less.
- For leaveners/spices, measure level; small swings alter the outcome.
- When doubling delicate batters, reduce chemical leaveners ~25% and check doneness earlier.
Quick example 200 g of all-purpose flour ≈ 1.65 US cups (loose). If you pack it, volume drops—use the “packed” option when available.
