Why do spice weights vary so much?

The density of spices varies significantly based on their moisture content, particle size and whether they are whole or ground. For example, ground cinnamon is lighter than ground cloves, and fresh rosemary weighs much more than dried.

Can I use this chart when scaling a recipe up or down?

Yes. Because the chart shows gram weights per teaspoon and tablespoon, you can multiply or divide directly without re-measuring. Weighing spices on a kitchen scale with this chart as reference gives the most accurate results.

Does the chart cover fresh herbs as well?

Yes. The chart includes approximate equivalents for fresh versus dried herbs (the standard rule is 1 tsp dried ≈ 1 tbsp fresh, but the chart shows actual gram values which are more accurate for recipe scaling).
