Where the 240 g comes from

ChefSolver publishes one measurement for tahini and derives everything else from it. The primary number is not a cup weight at all — it is a published tablespoon portion weight, because that is what the source actually measured. The cup weight follows from the exact definitional relation of 16 US tablespoons to the US cup, and the density follows from the cup weight. Nothing in that chain is an estimate, and no step of it is hidden.

Published cup weights for sesame pastes sit in roughly a 240-256 g band across the records this site can check, and a stiff, unstirred, oil-separated jar can sit outside it in either direction. The spread is real — hulling, roast level, grind fineness, added oil, how much of the separated oil you stir back in and how firmly you press the paste into a cup all move it. This is a reference profile for recipe work, not a claim about the specific jar on your shelf. Weigh the jar if the recipe is sensitive, or calibrate the tool from the jar's own nutrition label.

What this page used to say, and why it changed

Until 2026-08-15 this site published 258 g per US cup for tahini, from a stored density of 1.09 g/mL. That number is gone. The reason is not that a better chart was found — it is that when the value was audited, no record could be found behind it.

The old figure was stored as a density of 1.09 g/mL and labelled only "USDA FoodData Central" — a database, not a record. When we went looking for the specific entry behind it we found none: no food code, no portion weight, no published table. The USDA data we can point to says something different. The FNDDS portion record for tahini gives 15 g per tablespoon, which is 240 g per cup, and the three USDA SR Legacy sesame-butter records give 240 g, 240 g and 256 g per cup. 1.09 g/mL matched none of them. So it was retired rather than argued for: a number nobody can check is not a number we should publish, however long it has been on the page. This entry stays here because quietly changing the tables would hide that the site once said 258 g.

These are separate published records for separate products, not one number with an error bar bolted on — which is why the calculator lets you switch between them instead of averaging them into a figure that describes nothing.

16 g per cup separates the two, or 6.7 % — about one extra tablespoon in every cup. For a dressing that is nothing; for a halva or a cookie dough it is the difference between working and not. If your jar is stiff and spoonable rather than pourable, start from the heavier profile — or better, calibrate the calculator from the jar's own label.

A weight ounce is a mass and never touches the tahini data; a fluid ounce is a volume and does. Tahini jars are labelled both ways, which is exactly why the confusion is worth spelling out: a 16 oz jar is 454 g of paste, while 16 fl oz would be a volume of roughly two cups.

Why tahini conversion charts disagree

Compare five sites and you will see cup weights from the low 200s to the high 250s. Most of that spread is real — tahini genuinely varies — and some of it is numbers nobody can trace. Here is every reason, and which one ChefSolver uses.

  • Hulled vs unhulled seed. Hulled tahini is smoother, paler and milder; unhulled (wholegrain) tahini keeps the seed coat, which brings fibre, minerals, a darker colour and a bitter edge. The two behave differently in a measuring cup, but no source available to this site publishes a separate portion weight for unhulled paste — so ChefSolver publishes no number for it rather than inventing one.
  • Roast level. Darker roasting drives off moisture and makes the paste looser and more aromatic; a light roast gives a stiffer, paler, blander paste. Loose paste settles and fills a cup more evenly than stiff paste, which traps air pockets.
  • Grind fineness. A fine stone grind releases more oil and flows; a coarse grind stays granular and holds air. The same seeds can differ by several grams per cup depending only on how long the mill ran.
  • Oil separation. Tahini almost always separates in the jar. A cup taken off the top is oil-rich and light; a cup dug from the packed bottom is solids-rich and heavy. This is the single biggest source of error in a home kitchen and the reason every instruction on this page starts with 'stir the jar'.
  • Added oil. Some brands add sesame or neutral oil to keep the paste pourable. Added oil lowers the weight per cup, because oil is lighter than the sesame solids it replaces — a cup of sesame oil is 224 g against 240 g for the paste.
  • How the cup is filled. Tahini is sticky and stiff enough to bridge over gaps. Spooning it in loosely, pressing it down and levelling off can differ by a tablespoon or more per cup, and the paste left behind on the spoon and the cup wall is a real loss the recipe never sees.
  • US cup vs metric cup. A US customary cup is 236.588 mL; a metric cup is 250 mL. That alone is a 5.7 % difference before any tahini is involved.
  • Source methodology. Nutrition databases publish portion weights for a defined food code; baking charts publish a working number for recipe use; brand sites publish whatever their own product weighs. The three answer different questions and are not expected to match to the gram. What a source should always tell you is which question it answered — this page tells you.
  • Numbers with no record behind them. Some published tahini figures, including the 258 g this site itself used until 2026-08-15, carry no traceable record at all. A number you cannot check is not more accurate for being confident. Where ChefSolver cannot trace a value, it says so.

Whole seeds are barely half the weight of the paste per cup — grinding destroys the air space between seeds, which is why a recipe that swaps seeds for paste by volume goes badly wrong. Hummus is listed at 15 g per tablespoon in the same workbook, the identical figure as tahini, and is scaled here by the same 16 tbsp relation. These are reference weights for context; none of them is used to derive a substitution ratio, because a substitution ratio is a culinary decision, not a unit conversion.

Sunflower seed butter

Preparation: Buy unsweetened and unsalted if you can; sweetened sunflower butter will make a savoury sauce taste wrong before the swap has a chance.

The closest structural match on this list. Same seed-paste construction, same roughly half-oil composition, same willingness to emulsify with water — so it does everything tahini does mechanically.

What changes: A rounder, greener, less bitter flavour in place of toasted sesame. Slightly paler and greyer in colour. Almost identical body — it thins with water on the same curve, seizing included.

Adjust: Add a little toasted sesame oil if the recipe needs the sesame note and sesame itself is not the problem — but never if you are avoiding sesame as an allergen. Check the label for added sugar and salt and adjust the recipe's own seasoning down to match. In bakes leavened with baking soda, expect the crumb to develop a green tint over a day. It is a harmless reaction between sunflower's chlorogenic acid and the soda, and it does not happen with sesame.

Limits: It is not tahini in flavour, and in a dish where sesame IS the flavour — hummus you want to taste like hummus, halva, a sesame noodle sauce — the result is recognisably different even when the texture is perfect.

Sesame seeds ground with oil (tahini from scratch)

Preparation: Toast hulled sesame seeds until they smell nutty and are just golden, cool them completely, then blend with a neutral oil — start at about 2 tablespoons of oil per cup of seeds and add more until it flows. Expect several minutes of blending: it goes from sand to gravel to paste, and stopping at the gravel stage is the usual mistake. Note the volumes are not interchangeable: a cup of whole sesame seeds is 128 g against 240 g for a cup of the paste, because grinding removes the air between seeds.

It is tahini. The only difference is that you controlled the roast, the grind and the oil, which is exactly what the differences between brands come down to.

What changes: Fresher and more aromatic than a jar that has been open a month. Grittier unless you blend past the point you think is enough. Bitterness is under your control for once — a lighter toast gives a milder paste.

Adjust: Use hulled seeds. Unhulled seeds keep the bitter seed coat and make a paste most people find harsh. Add the oil in stages; too much at the start makes a slurry that never emulsifies properly. Let the blender rest if it heats up — overheated sesame turns acrid.

Limits: It takes ten to fifteen minutes and a blender that can take the load, and it does nothing at all for a sesame allergy.

Pumpkin seed butter

Another seed paste with the same construction and behaviour, and one of the few options that avoids sesame, tree nuts and peanuts at once.

What changes: A deep green colour that will show in anything pale — the biggest practical difference. An earthy, vegetal flavour, more savoury than tahini and less bitter. Similar body and the same water-thinning behaviour.

Adjust: Choose it for dishes where the colour is welcome or hidden — a green dressing, a dark bar, a swirl. Add acid and a little sweetness, which balance the earthiness the way lemon balances sesame.

Limits: The colour rules it out of about half of tahini's uses, and it is harder to find and more expensive than the alternatives.

Black sesame paste

Same seed, same process, same behaviour — it is tahini made from unhulled black sesame, so nothing structural changes.

What changes: A dramatic grey-black colour — the reason to choose it, and the reason not to. A deeper, more roasted, more bitter sesame flavour. Often sold sweetened, especially the East Asian dessert pastes.

Adjust: Check whether the jar is sweetened before using it in anything savoury. Reduce the recipe's sugar if it is. Expect to want a little more salt and acid than the pale paste needed.

Limits: It is a sesame product, so it is no answer to a sesame allergy, and the colour makes it unusable in anything meant to look pale.

Cashew butter

Preparation: If you only have raw cashews, soak them in hot water for 30 minutes and blend with a little of the soaking water — the result behaves like the butter for sauce purposes.

Smooth, pale, high-fat and readily emulsified — mechanically it does everything tahini does in a cold sauce.

What changes: Much milder and slightly sweet; the savoury edge disappears. Creamier mouthfeel — cashew reads as dairy in a way sesame never does. Paler, which shows in a hummus or a pale sauce.

Adjust: Add lemon and salt more aggressively than the recipe says; without them the dish tastes flat rather than mild. For hummus, accept it will taste like a cashew dip, and lean into garlic and cumin rather than trying to fake sesame.

Limits: Cashew is a tree nut, so this is not the option for a nut allergy. And it is the mildest paste here, which is the opposite of what a sesame-forward recipe wants.

Almond butter

The nut butter closest to tahini in oil content and grind, so it takes over the structural role cleanly in both baking and cold sauces.

What changes: Sweeter and mellower, with a marzipan edge in sweet recipes. Slightly stiffer than tahini, so sauces need a touch more liquid. Darker and browner than a pale tahini.

In cold sauces both ingredients do the same visible job — thick, pourable, garlicky, lemony — and the two are used side by side in the same cuisines.

What changes: Tang replaces bitterness; the dish gets brighter and lighter. It stops being dairy-free and stops containing sesame. It splits if you boil it, where tahini would merely tighten.

Adjust: Add a spoonful of olive oil to restore some of the richness the tahini was carrying. Never add it to a boiling pan — stir it in off the heat. In a hummus, expect a dip rather than hummus; garlic, cumin and good olive oil carry it.

What changes: A strong, unmistakable peanut flavour replaces sesame; nobody will fail to notice. Thicker and stiffer, needing more water to reach the same pouring consistency. Sweeter, even in the unsweetened jars.

Adjust: Add water a spoonful at a time — peanut butter takes more of it than tahini does. Push the acid up: lime or rice vinegar keeps it from tasting like a dessert sauce. In hummus, accept it will not be hummus. It is a perfectly good chickpea-peanut dip and a poor imitation.

Limits: Peanuts are a major allergen in their own right, listed separately from tree nuts and sesame, and peanut butter is often produced on shared equipment. Preparation: Blend until completely smooth before adding anything else — tofu that is merely mashed will stay grainy no matter what you do next.

It gives a cold sauce body and a smooth, spoon-coating texture while avoiding sesame, tree nuts and peanuts at once — a combination very little else on this list manages.

What changes: Almost no flavour of its own, which is either the point or the problem. Much lower in fat, so the mouthfeel is lighter and less coating. Very pale, close to tahini in colour.

Adjust: Add a spoonful of a neutral oil or toasted sesame oil to restore some richness — unless sesame is what you are avoiding. Season harder: salt, lemon, garlic, and often a little sweetener. Use it cold; heating it does nothing good.

What changes: The emulsion stops being self-supporting. A hummus made with oil instead of tahini is looser and needs more chickpea starch or ice water to hold. The flavour becomes peppery-green rather than toasted-savoury. The dish gets glossier and less opaque.

Adjust: Add ice water while blending; in a hummus this is what replaces the structure the tahini was giving. Increase the lemon and garlic — there is less body to carry them. Expect to add extra chickpeas or a spoonful of the cooking liquid to rebuild thickness.

Limits: Oil alone cannot emulsify, cannot bind and cannot bake. This is a rescue for cold, starch-supported dishes only.

Miso is a salty, fermented paste with almost no fat, so it replaces tahini's savoury depth and none of its richness. How much you need depends on the dish's salt budget, not on how much tahini it called for — and using a tahini quantity of miso would make the dish inedible.

Preparation: Whisk a spoonful of miso with a spoonful of neutral oil and a little warm water first; that mixture, not the miso alone, is what stands in for the paste.

In a savoury noodle or dressing context, what the tahini was contributing is savoury depth and body. Miso covers the first convincingly and oil covers the second.

What changes: Salt goes up sharply — this is the change that ruins the dish if you ignore it. A fermented, umami depth replaces the toasted-nutty one. Much less body unless you add oil alongside.

Adjust: Remove the recipe's added salt entirely and season at the end. Start with about a quarter of the tahini volume in miso and taste. Add oil separately to rebuild the richness the miso cannot give.

Limits: Anything sweet, and anything where the paste was the fat, is out. It is a flavour answer, not a structural one.

In no-bake confections the tahini is a fat binder that sets on chilling, and coconut butter does that job better than tahini does.

What changes: It sets hard when it cools, which tahini never does — an advantage in a no-bake bar, a disaster in a sauce. Sweet, coconut-forward flavour. It does not emulsify with water at all; it separates.

Adjust: Only use it where setting firm is wanted. Work fast and keep everything warm while mixing. Reduce other sweeteners.

Limits: Coconut is treated as a tree nut under United States allergen labeling, so this is not the option for a tree-nut allergy despite coconut not being a nut botanically. It is also useless in any water-based sauce.

Toasted sesame oil

Sesame oil is the flavour of tahini without any of its structure — no solids, no emulsifier, no body. It cannot replace the paste at any ratio, and the amount you would need for flavour alone is a teaspoon or two regardless of how much tahini the recipe called for. Listed here because it is the swap people reach for, and the answer is that it is not one.

It does not, on its own. Its honest use is as a flavour top-up over a paste that supplies the structure.

What changes: The sesame aroma is there, more intensely than tahini gives it. Everything else the tahini was doing — thickening, emulsifying, binding — is gone. Sauces split, doughs go greasy.

Adjust: Use it as a finishing accent on top of a different substitute, not as the substitute itself. A teaspoon or two is enough for a whole dish; it is far stronger than the paste. Pair it with sunflower seed butter if you want sesame flavour with seed-paste structure — but never if sesame is the allergen you are avoiding.

Limits: It is a pure fat with no emulsifying solids, and it is a sesame product, so it is neither a structural nor an allergen answer.

Sesame, tree nuts and peanuts

Sesame is one of the major food allergens recognised in United States labeling law: it was added by the FASTER Act, and packaged foods sold in the US have had to declare it since 1 January 2023. That matters on this page in two directions. Replacing tahini for an allergy means avoiding every sesame product, including black sesame paste, toasted sesame oil and homemade paste — the substitution filter on this page treats sesame-free as a hard filter and never as a preference. And replacing something else WITH tahini adds a major allergen to a dish that did not have one, which is worth saying out loud before you serve it to other people. Peanuts and tree nuts are listed as separate major allergens, and coconut is treated as a tree nut for labeling purposes, so the three filters on this page are kept separate rather than collapsed into one 'nut-free' idea. Tahini instead of peanut butter

Both are ground-seed pastes of similar consistency doing the same structural job: emulsifying a sauce, binding a dough, carrying fat and flavour. Swapped by volume they behave close enough that a recipe holds together.

What changes: The sweetness goes. Peanut butter is faintly sweet and most jars carry added sugar and salt; plain tahini is savoury and slightly bitter, so a sauce built for peanut butter will taste sharper and flatter. The sauce gets thinner at the same volume, then thickens faster when water goes in. Tahini has more free oil and less starch and protein bulk than peanut butter. Butter is about four-fifths fat; sesame paste is roughly half fat and half solids, so the same volume delivers less shortening power and more bulk. Melted-butter recipes take this better than creamed-butter ones, because tahini cannot hold whipped air.

Body increases sharply: an oil dressing runs off leaves, a tahini one clings. Peppery olive bitterness is replaced by sesame bitterness, which is rounder and reacts better to sweetness.

Adjust: Add water. A dressing that was all oil needs roughly its own volume again in water once tahini replaces the oil, added slowly through the seizing stage. Reduce the acid slightly at first and taste: tahini mutes acidity, so a sharp vinaigrette ratio can end up tasting flat rather than bright. Whisk rather than shake.

Limits: Anywhere olive oil is doing a heat job — frying, roasting, greasing a pan — tahini is not a substitute at all. Sesame solids burn where oil merely gets hot.

Almost every tahini problem is one of three things, and none of them is the jar's fault. This is the part a conversion chart cannot give you.

Stir the jar before you measure anything

Tahini separates in storage: sesame oil rises and the solids pack down hard at the bottom. This is normal and is not a sign the jar has gone off. It does mean that a spoonful off the top and a spoonful from the bottom are different ingredients — one nearly all oil, the other a stiff paste — and neither weighs what the chart says. Stand the jar at room temperature for an hour, then stir from the bottom with a narrow spatula or a table knife until it is uniform. Every gram figure on this page assumes a stirred, uniform jar. Storing the jar upside down between uses makes the next stir much easier.

Tahini seizes before it loosens — this is supposed to happen

Add water to tahini and it does the opposite of what you expect: it stiffens into a pale, grainy paste that looks curdled and ruined. Keep going. Almost every 'my tahini sauce split' problem is someone stopping at the seizing stage and throwing it out, or panicking and adding oil, which makes it permanently greasy. Add cold water a tablespoon at a time, whisk through the stiff stage, and expect roughly half the tahini's volume in water for a thick sauce and closer to its own volume again for a pourable drizzle. Cold water works better than warm.

Why your tahini tastes bitter, and what actually fixes it

Bitterness in tahini comes from three places: the seed coat, if the paste is made from unhulled seeds; the roast, if it went dark; and age, once the oil has begun to oxidise. Only the third is a fault. For the first two, the fix is not more sweetener — it is salt and acid. Salt suppresses bitterness directly, and lemon juice does it better than vinegar because its own flavour sits alongside sesame rather than against it. A pinch of salt and a squeeze of lemon per two tablespoons of paste transforms a sauce that tasted harsh. If the bitterness is sharp and lingering rather than round, and the paste smells like old crayons, the oil has gone rancid and no seasoning will rescue it.

In a soup or a stew, temper it: whisk a ladle of the hot liquid into the tahini in a separate bowl, then stir that back into the pot off the heat. In a noodle sauce, build the sauce cold and let the hot noodles warm it. Never boil a finished tahini sauce, and never add the paste to dry heat at the start of a cook.

Drop the oven by 10 °C / 25 °F when tahini replaces a fat, keep exposed swirls thin, and judge doneness by the edges and by smell rather than by colour.

In sweets, tahini is a savoury counterweight

Halva, tahini brownies, tahini swirls and date-tahini fillings all work on the same principle: the paste is bitter and salty enough to keep a very sweet mixture from cloying. That means reducing the sugar when you add tahini is usually the wrong move — the sugar is what the sesame is there to balance. Salt it properly and taste the finished mixture cold, because sesame bitterness reads much stronger warm than it does at room temperature.

Most plain tahini is sold unsalted and unsweetened, unlike most peanut and almond butters. Recipes converted from a nut butter therefore taste flat, and cooks blame the tahini. Sealed, it is shelf stable

An unopened jar of tahini keeps in a cool, dark cupboard until its best-before date. It is shelf stable for the same reason honey and oil are: there is almost no free water in it for microbes to use. That is a statement about microbial spoilage, not about quality — the oil still oxidises slowly, so a jar bought two years ago will taste duller than a fresh one even though it is not unsafe.

After opening: cupboard for weeks, fridge for months

Once opened, a jar in a cool cupboard stays good for several weeks and one in the fridge for several months. The trade-off is workability: cold tahini goes stiff and almost unspoonable, so if you use it often the cupboard is the practical choice and if you use it rarely the fridge is. Always close it tightly and never return a wet or used spoon to the jar — introducing water is the one thing that gives a low-water food something to spoil with.

Separation is storage, not spoilage

Oil on top means the jar has been standing, nothing more. Store it upside down between uses and the solids redistribute themselves, which saves a great deal of stirring. Refrigeration slows separation because the paste is stiffer, but does not stop it.

How to tell when it has actually gone

Rancid sesame oil smells sharp and waxy, like old crayons or oil paint, and tastes bitter in a way that lingers at the back of the throat rather than sitting round on the tongue. That is different from the pleasant bitterness of a dark roast. Heat, light and air all speed it up, which is why a jar kept above the stove goes off far sooner than one in a dark cupboard. If it smells wrong, no amount of salt, lemon or sugar will fix it.

Freezing works, and is worth it for a big jar

Tahini freezes without damage because it has too little water to form disruptive ice. Thaw at room temperature and stir; the texture comes back.

Measuring tahini accurately

  • Stir the jar first, every time. Nothing else on this list matters as much: an unstirred jar can hand you nearly pure oil or nearly pure solids from the same 'tablespoon'.
  • Weigh it if you can. Tahini is sticky enough that a level cup is a fiction — the paste bridges over gaps going in and stays behind on the way out.
  • Oil the spoon or the cup. A film of neutral oil, or a quick pass under hot water, means the paste slides out instead of leaving a tablespoon behind.
  • Scrape the measure into the bowl with a spatula. What clings to a measuring cup is a real and repeatable loss the recipe never accounted for.
  • Weigh straight into the mixing bowl on a tared scale. It skips the transfer loss entirely and is faster than washing a measuring cup.
  • Use the jar's own label if it gives a serving size in both grams and spoons — that is a measurement of your actual product, and the calculator on this page will take it.
  • Do not measure it cold from the fridge. Stiff, cold tahini traps far more air in a cup than the same paste at room temperature.

How many grams is 1 cup of tahini?
About 240 g for a US cup (236.588 mL) of stirred tahini. That is derived from the USDA FNDDS portion record for tahini, which lists 1 tablespoon at 15 g, scaled by the exact 16 tablespoons that make a US cup. It is not a universal figure: a denser sesame butter paste comes out at 256 g per cup in the records this site can check, which is roughly a 6.7 % spread from top to bottom.
How many grams is 1/2 cup of tahini?
About 120 g, which is half of the 240 g reference cup. Every fraction on this page is derived from that one number, so nothing on the page can contradict anything else.
How many grams are 1/4 cup and 1/3 cup of tahini?
60 g and 80 g respectively, at the reference profile of 240 g per US cup. 2/3 cup is 160 g and 3/4 cup is 180 g.
How many grams is 1 tablespoon of tahini?

Both can be, for different products. Published sesame-paste weights this site can trace run from 240 g to 256 g per cup, and the difference is real: hulling, roast, grind and added oil all move it. What ChefSolver will not do is publish a number it cannot trace — this site itself used 258 g per cup until August 2026, and when that figure was audited no record could be found behind it, so it was retired rather than defended.

Does it matter whether my cup is a US cup or a metric cup?
Yes — a metric cup is 250 mL against 236.588 mL for a US customary cup, so the same nominal 'cup' of tahini is 254 g instead of 240 g. That is a 5.7 % difference before anything about the tahini is considered.
My recipe says 8 oz of tahini. Is that weight or volume?
